Skewer of fire-grilled rendered pork, crisped boneles chicken leg and beef fillet perfectly seasoned and kissed by smoke, served with smoked chili glaze tamarind jus and ember roasted veggies.

The Hogfather

Braised velvet pork Shank, finished with a smoked bone marrow jus, served on a bed of root puree accented with pickled shallots, charred greens and micro herbs.

Tilapia Primavera

Tender fillet of tilapia baked served on top of a delicate carrot tagliatelle sautèed in butter and cream herb sauce, with a drizzle of citrus infused oil.
